Valentine’s Day and chocolate are inseparable. Make this year’s indulgence healthy and enjoyable. So moist and delicious you might not even want to share with your special Valentine!
The featured ingredient in our Try This Tuesday recipe is raw cacao – chocolate in its raw, natural state. Not to be mistaken with cocoa or milk chocolate which are processed forms of chocolate. Raw cacao can be purchased at your local health food store in powdered form.
Black Bean Cupcakes
1 can black beans, drained and rinsed
½ cup raw cacao powder
4 tbsp extra-virgin coconut oil, melted
½ cup maple syrup
1 tsp vanilla extract
5 large free range eggs
1 teaspoon baking powder
½ teaspoon baking powder
pinch of sea salt
¼ cup water
Preheat oven to 350˚F. Blend all ingredients together in a blender or food processor. Place paper muffin liners in muffin baking tray. Bake at 350˚F until edges are cracked and a toothpick inserted in the centre comes out clean.
Chocolate Mousse
2 avocados
½ cup cacao powder
1 tsp vanilla extract
2 tbsp maple syrup
Mash avocados, add cacao powder, vanilla, and maple syrup. Mix well. Serve chilled as mousse or use as icing for the Black Bean Cupcakes.
