Try This Tuesday FINAL

No meat? No problem! This Mexican inspired dish will have your tastebuds dancing. With a mixture of savoury flavours, this meal will leave you feeling full and satisfied without the need to add meat. Through our Try This Tuesday recipes we will be showing you how to easily make substitutions in your diet to decrease the amount of meat and animal products you are consuming. Quinoa and black beans are both excellent sources of vegetable-sourced proteins.  They are also high in fibre (we can all use more fibre in our diets) and are loaded with essential vitamins and minerals.

This super easy recipe is great as a main dish, a post-workout snack, or as lunch leftovers throughout the week.

Black Bean Quinoa One Dish Meal

1 can black beans, drained and rinsed (may substitute home cooked black or pinto beans)
1 cup of dry quinoa, rinsed and cooked according to package directions
1 medium zucchini, diced
1 medium sized onion, dicedquinoa salad with vegetables, vegetarian food
1 green pepper, diced
1 coloured sweet pepper, diced
2 handfuls spinach, chopped
8 oz mushrooms, sliced
1 tablespoon coconut oil
2 garlic cloves, crushed

Place coconut oil, garlic, and all diced vegetables in a large frying pan.  Cook until vegetables are tender. Add beans and cook for an additional 5 minutes.  Add cooked quinoa, heat through and serve with guacamole.

Easy Guacamole

1 avocadoGuacamole
1 small tomato, seeded and diced
1/4 sweet onion, diced
1/2 jalapeño pepper, diced (for less spicy guacamole, remove the seeds)
2 tablespoons diced cilantro
Juice from 1 lime
Pinch of sea salt

Cut avocado in half, remove the pit, and use a spoon to scoop out the flesh. Dice the avocado and add chopped tomato, onion, jalapeño, cilantro and sea salt. Add lime juice and mix well.

Serve guacamole with the Black Bean Quinoa Meal.
