For me, the most exciting part of spring is the change in variety of fresh fruits and vegetables that are found at the local farmers market and grocery stores. In Canada, we are more limited to the selection, but thanks to importing, we are able to enjoy some of the sweet treasures from the south.
Mangoes are among some of the sweetest fruits allowing them to be used in smoothies, eaten as a snack or included in the refreshing salad recipe below. This salad is ideal for packed work lunches or alongside a grilled chicken breast.
Make sure you wait until a mango is tender to touch before eating, otherwise the flavour won’t be at its full potential.
Sweet and Crunchy Mango Salad
2 cups romaine lettuce
1 mango, diced
1 tbsp sweet onion, diced
2 tbsp raw sunflower seeds
2 tbsp cubed mozzarella cheese
Combine all ingredients and pack in a to-go container for work. Savour this delicious salad on your lunch break.
