If it’s a pot-luck gathering we have the perfect dish for you!  This is also an excellent salad for parties with family and friends.

Traditional potato salad uses mayonnaise for flavour and to create a creamy texture.  Mayonnaise is one of those condiments that should be avoided as often as possible due to its high canola oil content (canola oil is an unhealthy fat that can contribute to elevated cholesterol levels and undesirable fat ratios in the blood).  There are also many additives in mayonnaise that make it less than ideal for consumption.  

This Not So Traditional Potato Salad Recipe uses herbs and nopales (harvested from cactus plants in Mexico) to flavour the potatoes.

Source nopales at a Latin Grocery Store.  Green peppers can also be substituted if nopales are not available in your area.

Not So Traditional Potato Salad

8 potatoes, washed and diced into small cubes
4 nopales, diced into small cubes (or substitute diced green pepper)
1 teaspoon dried oregano
1 teaspoon cumin, crushed
3 tablespoons Extra Virgin Olive Oil
Sea salt to taste

Bring a large pot of water to a boil.  Add potatoes and boil until tender but not mushy.  Heat olive oil in a large pan. Strain potatoes and place in pan.  Add chopped nopales and spices.  Cook until potatoes are fully cooked and are starting to crisp up. Chill and serve cold.
