Snacks are an essential part of the workday, giving you a pick-me-up to maintain brain function and focus. This delicious little snack is guilt-free, crunchy and refreshing and can easily take the place of other salty snack foods like potato chips, peanuts, and crackers. Kale chips can be made ahead and stored in airtight containers to maintain freshness.
Enjoy on the commute home, or as a midday snack. Pack a few extra for sharing with co-workers and colleagues, or pass along this recipe.
Baked Kale Chips
1 bunch kale
3-4 tbsp extra virgin olive oil
½ tsp sea salt
Preheat oven to 300˚F. Line a cookie sheet with parchment paper. With a knife or kitchen shears carefully remove the leaves from the thick stems and tear into bite size pieces. Wash and thoroughly dry kale with a salad spinner. Drizzle kale with olive oil and massage oil into kale. Season with sea salt. Bake until the kale is crispy but are not burnt, 15 to 20 minutes.
Health Tip: Using a dehydrator creates a raw snack that maintains the nutritional integrity of the kale.
If you are pressed for time, kale chips can also be found at your local health food store.
