Eating healthy is a balance between eating what you love and eating what you should love.  As a nutritionist and a health enthusiast I have spent several years tweaking traditional recipes to make them align more with my nutrition values and beliefs.  These recipes allow me to enjoy some “treat” meals while still maintaining a balanced diet.  Today’s recipe features naturally grown, antibiotic and hormone-free chicken strips, made with ingredients you will have in your pantry.  I have paired them with sweet potato fries that are full of beta-carotene, fiber, and have a lower glycemic index than regular potatoes.

This is a quick and easy meal for weeknights and makes great leftovers for work lunches.

Homemade Chicken Strips

2 Antibiotic and hormone free chicken breasts
1/4 cup unflavoured almond milk
Seasoned bread crumbs

Cut chicken breasts into strips. Dip in almond milk and roll in bread crumbs.  Place on a baking sheet lined with parchment paper.  Bake in oven at 350˚F until chicken is cooked through and the bread crumbs are crispy.

2 large sweet potatoes
2 tablespoons extra-virgin olive oil
Pinch of sea salt
Pinch of garlic powder

Slice sweet potatoes into matchsticks and toss with olive oil and spices.  Place on a baking tray and bake at 350˚F for 30-40 minutes (depending on the size of the fries).
