Long weekends are magnets for overindulging on drinks, snacks and desserts. Be kind to your health and make conscious substations to control caloric intake. You can still enjoy a sweet treat to finish off a meal, if you are making smart choices.
Grilled pineapple has such a delicious flavour as the heat from the grill sears the naturally occurring sugar in pineapple to create a caramelized layer around the outside.
Any leftovers are great for topping a salad or pair with a chicken breast and leftover veggies as a quick and easy work lunch.
Grilled Pineapple
1 pineapple, skin removed
Ground cinnamon
Slice pineapple in 1/2 inch thick rings. Sprinkle with cinnamon. Preheat grill to 400 F. Place pineapple slices on the grill and close the lid. Grill for 2-3 minutes per side or until grill marks appear and the pineapple is tender. Serve warm.
