Spring is finally showing signs of arrival but cool evenings and damp weather still have me craving hearty, warming meals.
Today’s recipe uses curry and turmeric powder to create a bold flavour pairing with broccoli and coconut milk. Curry and turmeric are both extremely healing spices that also warm the body. Enjoy this deliciously rich soup for lunch or for dinner along with a salad or stir-fry. This soup is easily heated up at work or pack it in a thermos and enjoy on your lunch break.
Broccoli Cauliflower Curry Soup
4 cups broccoli and cauliflower florets
1 onion, diced
2 cloves garlic, crushed
1 tablespoon coconut oil
2 cups chicken or vegetable broth (homemade is best, if not MSG-free is essential)
¼ cup coconut milk
1/2 tsp curry powder
1/2 tsp turmeric powder
In a Dutch oven or large skillet heat coconut oil, onion, and garlic. Sauté for 3 minutes, then add broccoli, cauliflower, broth, and spices. Cook until vegetables are tender. Add coconut milk and remove from heat. Using a hand blender, blend until desired consistency.
