Traditional yogurt is being cleverly marketed as health boosting for its probiotic content.  The problem is that the probiotic content is not sufficient to really benefit the consumer and most yogurts are full or sugar or artificial sweeteners. Not to mention, many people do not tolerate dairy products well and therefore should not be consumed regularly. Instead, a probiotic supplement may be more effective than consuming yogurt.

This perfect breakfast treat is a fantastic source of protein, dairy free and can be easily substituted for traditional yogurt! This is also a great option for a mid-morning snack on the job.

Blueberry Cashew Yogurt
1 cup cashews soaked in water for 2 hours and drainedblueberry-cashew-yogurt.jpg
3/4 cup water
1 tsp xylitol or 2 tablespoons pure maple syrup
2 tbsp lemon juice
1/2 tsp sea salt
1 cup blueberries (if frozen – must be fully thawed to enhance flavour)

In a food processor, using an S blade, crush cashews, water, xylitol, lemon juice, and salt until creamy and smooth. (May take up to 5 minutes.)

Add blueberries to food processor and continue to process until blended fully. Other fruit options include strawberries, raspberries, or peaches.

Cool in the fridge and serve chilled.
