Summer is a time for backyard barbecues and get-togethers. For convenience burgers are often purchased in a box.  I have two issues with boxed meat. The first issue is that the meat quality is less than ideal. You can be certain that this isn’t anti-biotic free meat nor was the animal allowed to graze on grass (its naturally desired food source).  The second issue I have is with the chemicals and additives that are used to flavour the meat.

The Solution: Take your next burger to the gourmet level. Purchase grass fed, antibiotic free ground beef from a local farmer or farmers market and try this twist on a classic burger.  Yes, you have to eat this burger with a fork and knife but its well worth it! Pair this with the Not So Traditional Potato Salad recipe.

Portobello Mushroom Burger
1 lb grass-fed ground beef
1/4 onion, diced fine
1 free-range egg
4 portobello mushrooms, washed and ends trimmed

Burger Toppings: Avocado, Tomato, Onion, Lettuce, Pickle

Prepare burgers – combine beef, onion and egg and form 4 burger patties. Wash mushrooms.
Grill burgers until cooked through. Grill mushrooms until tender.

To serve, place a portobello mushroom on a plate.  Top with avocado, onion, lettuce, tomato, and pickle.  Place burger on top and serve.
