Coconut comes in all different forms – fresh coconut meat, coconut flakes, coconut oil, coconut milk, coconut flour and coconut water. In all of its various forms, it is highly nutritious and rich in vitamins and fibre. The healthy fats in coconut are called medium chain triglycerides, which are easily digested by the body and provide us with a very usable source of energy.
Coconut boasts a massive list of health benefits including anti-inflammatory, anti-bacterial, anti-viral and anti-microbial properties and aids in supporting organ function as well as helping with weight management.
In today’s recipe we are using the white, creamy flesh of a fresh coconut to give this smoothie an added boost.
Recipe
1 cup unsweetened almond milk
1/2 cup frozen blueberries
1/2 frozen banana
1 medium sized piece of fresh coconut flesh
1 handful of spinach
1 tbsp hemp hearts
Place all ingredients in a high power blender and blend until desired consistency. Serve immediately and enjoy immensely!
