Tomatoes are almost in full-swing in Ontario and you may be already seeing some fresh tomatoes popping up at farmers markets and fruit stands. Locally grown tomatoes have a sweet flavour and a delicate texture that make them perfect for salads and salsas.  You can also add them to soups, and stir-fries, or make this tomato sauce recipe.  Package freshly made tomato sauce in glass jars and freeze for use throughout the winter.

The best way to make tomato sauce is to do it in bulk.  Purchase a bushel or a half bushel of roma tomatoes from your local Farmer’s Market.  Purchasing in bulk gives you the best value for you money and it will keep your family fed well during the winter months.

Homemade Tomato Sauce
(recipe is based on 20 tomatoes – multiply recipe for the number of tomatoes used)
20 Roma tomatoes, washed and seeds removed.
3 tablespoons Extra Virgin Olive Oiltomato sauce in white bowl and on a table
1 tablespoon, ground oregano
2 cloves garlic, crushed
1/2 teaspoon sea salt

In a large pot place olive oil and spices.  Cut tomatoes into small pieces and add to the pot.  Cook on medium heat until tomatoes are tender.  After the tomatoes have cooled slightly, transfer to a blender and blend until smooth. Place tomato sauce in glass jars and freeze.

This homemade tomato sauce is fantastic for use as a sauce for pasta or as a pizza sauce.  Try it with our Zucchini Pasta Recipe!
