A small backyard garden not only puts fresh produce on the table, but it also lowers grocery bills, reduces the carbon footprint of food transport, and is an excellent way to connect with mother earth after a day at the office. Another great suggestion is to begin an office vegetable exchange to increase the variety of fresh vegetables you can enjoy this season. Talk to your coworkers about what they are growing in their gardens this summer and set up an exchange program.
April is the perfect time of year to purchase seeds, prepare the soil, and plant a vegetable garden. For new gardeners, some vegetables are easier than others to grow, while others require more maintenance and invested time. Below are 5 easy to grow, low maintenance veggies that you can enjoy all summer long.
1. Lettuce – Whether its a delicate red or green leaf lettuce or a hearty romaine, freshly grown lettuce makes amazing salads, perfect for lunch at work or as a side salad with dinner.
2. Spinach and Kale– These are the two of the most versatile greens for salads, stir-fries, and smoothies. Both thrive in cool weather and can be bountiful until the snow falls in November.
3. Zucchini – Although zucchini plants require about one square meter of growth space, they are well worth the space. Zucchini’s produce a high food yield and can be incorporated in stir-fries, muffins or can be grilled.
4. Beets – Bright in colour and rich in nutrients, beets offer colour and flavour to any garden. Beets can be planted early in spring, with little risk of frost damage. Enjoy beets in salads or as a side dish.
5. Green beans – Great for snacking, sautéing, or steaming, green beans are a great addition to any garden. Extra beans can be blanched and frozen for the wintertime.
